Zucchini Rotini

Ingredients

  • Half a large zucchini
  • olive oil
  • onions
  • a can of strained tomatoes that is 26 ounces (750 grams)
  • salt
  • pepper
  • crushed fresh garlic
  • oregano

Directions

First thinly slice half of a large zucchini. Sauté in a skillet with olive oil and salt. Set aside.

Next, in a pot, cook the chopped tomatoes from the can with crushed garlic, oregano, salt, and olive oil. Remove from heat and set aside. Add the zucchini to the pot of tomatoes.

Add chopped onions to the skillet and add some more olive oil. Sprinkle with salt. Sauté the onions until soft. Add the cooked onions to the pot with the tomatoes and zucchini. Once it’s cooled a bit, use an immersion blender to blend the tomatoes, onions, and zucchini together until smooth.

In another pot, cook any pasta you like, I’m using rotini. Once it’s done, add the pasta to the sauce and top with grated Parmesan or mozzarella. You can also sprinkle with fresh basil. BAM! You’re done.
