Fried Egg with Black Beans

I like to make this on weekdays for breakfast. It is delicious and takes about 15 minuets to make. the beans taste so good with the salsa mixed in.

Ingredients

  • 1 egg
  • 1/4 cup cooked black beans
  • A scoop of salsa
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • a pinch of salt
  • some chopped fresh cilantro

Preparation

Heat a pan and add clarified butter or oil. Crack the egg over the pan and cook it sunny side up. If you place the egg on one side of the pan you’ll have room to cook the beans at the same time. If not, just cook the beans after the egg is done. Add the beans to the pan and season them with the salsa, cumin, smoked paprika, and a little salt. Stir them gently to mix in the seasonings (be careful not to touch the egg!) Slide the egg onto a plate when it’s done and scoop the beans next to the egg. Sprinkle the beans with cilantro. BAM! You’re done.
