Ingredients
3/4 cup pecans
2 cups flour
1tsp baking soda
1tsp salt
1/2 tsp baking powder
tow sticks unsalted butter
3/4 cup granulated sugar
3/4 cup light brown sugar
2 eggs
1 tsp vanilla extract
1 1/2 cups old-fashioned oats
1 cup chocolate chips
1/2 cup shredded unsweetened coconut
Instructions
Preheat the oven to 350 F. Toast the pecans on a baking tray in the oven for 10 minutes until fragrant. Let them cool and then chop them. In a bowl, sift together the flour, baking soda, salt, and baking powder.
Use an electric mixer to cream butter and both saugers add the eggs and vanilla and mix. Next, mix in oats, coconut, chocolate chips and pecans.
Spray three baking sheets with cooking spray. Scoop dough onto the sheets, about 2 inches apart. Bake them for about 15 minutes until the edges begin to brown. It’s a good idea to rotate them halfway through the cooking. Put them on a wire rack to cool.
