Ingredients
- 2 bananas
- 4 eggs
- 1 tsp vanilla extract
- 1/2 cup old fashioned rolled oats
- 1/2 tsp salt
- 3/4 cup flour
- 4 tsp baking powder
- 2 tbsp. butter
- 1 tsp sugar
- 3/4 cup Greek yogurt
If the mixture is too thick, you can add some milk and if the mixture is too watery, you can add a little bit of flour.
Instructions
- Mash the bananas in a large bowl. Add the eggs and vanilla to the banana and mix.
- Add the oats, salt, baking powder, flour and sugar to the banana egg mix. stir until combined but, don’t over stir because it can make the pancakes chewy and flat.
- Melt the butter in a pan of the microwave and add to the mixture. Stir and pour into a heated skillet with butter or oil on it to prevent the pancakes from sticking. pour the pancake batter on the pan in small circle shapes and cook evenly on each side or until brown. You can also add chocolate chips in the batter before cooking to make into a treat.
- Serve with toppings like fruit or enjoy plain.
