Banana Oatmeal Breakfast Cookies

This is the perfect recipe for overripe bananas. I love to bring them camping and they are perfect before a swim workout because they give me energy without making me feel too heavy.

Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup (4.5 oz)  peanut or almond butter
  • 1/4 cup (2.75 oz) honey (or slightly less)
  • 1/2 tsp salt
  • 2 1/4 cups old-fashioned rolled oats
  • 1/3 cup chocolate chips, raisins, or dried cranberries

Directions

  1. Preheat oven to 350 degrees.
  2. Line baking sheets with parchment paper.
  3. Mix together mashed bananas, peanut butter, honey, and salt. Add in oats, nuts and chocolate chips (or raisins or cranberries). Stir to combine.
  4. Roll approximately 2 tbsps. of the cookie batter into a tight ball and drop onto the lined baking sheet and pat flat, leaving an inch or two between each cookie. Bake for 12-15 minutes.
  5. Cool and enjoy! BAM! YOU’RE DONE!
