(Dolce de Mandorle)
My Nonna makes these cookies every Christmas. They have orange and lemon zest, almonds, water and sugar. Sometimes she adds vanilla, almond extract, or amaretto (liquor.) The traditional recipe for these cookies uses flour but this recipe has no flour. I love how the almonds smell when they are cooking.
Ingredients
- 1 lb. unsalted raw almonds
- 12 oz. sugar
- 1/2 cup boiling hot water
- zest of one lemon
- zest of one orange
Preparation
Place the almonds on a baking sheet and roast in a preheated oven at 375 degrees for 10 minutes. Set aside to cool. Grind the almonds in a food processor until finely chopped NOT POWDER. Pour into a mixing bowl and add sugar, lemon zest, and orange zest. Mix well. Add hot water to the mixture and mix well. Use a spoon to drop heaping teaspoons of the mixture onto a baking sheet lined with parchment paper. Arrange them 2 inches apart and bake at 375 for 10 minutes. BAM YOU’RE DONE!👍
