Black Bean Burritos

When my family and I go boating, we bring black bean burritos. They are convenient and easy to eat on a moving boat. They are delicious and they only take half an hour to make! The flavor I like the most is the fresh cilantro.

This recipes makes 6 medium burritos.

Ingredients

  • 2 cans of black beans, drained and rinsed
  • 2 teaspoons cumin
  • 2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 1 – 2 tablespoons tomato paste mixed with water (optional)
  • salt & pepper
  • 1 tablespoon fresh cilantro, chopped
  • 1/3 cup Parmesan cheese, grated
  • 6 medium-sized flour tortillas

Preparation

Preheat the oven to 375 degrees. Combine the black beans in a pot with the seasonings and tomato sauce. Stir for about 5-10 minutes until everything is mixed well. Sprinkle in cheese and mix for another minute. Remove from heat and sprinkle with cilantro. Spoon a few tablespoons of beans onto a tortilla and wrap it into a burrito. Put it seam-side down into a greased baking dish. Repeat with the other tortillas. Bake in the oven for about 10 minutes. BAM! You’re done.
