This recipe is from my neighbor Mary. She’s very kind and she’s a great baker. She gave us some of these cookies last week and I loved them. She gave me this recipe and also included tips and tricks.
Ingredients
- 1 cup lightly packed brown sugar (light or dark doesn’t really matter, but I use light)
- 1/2 cup sugar
- 1 stick butter flavored Crisco shortening
- 1/4 stick of unsalted butter, room temperature or lightly softened in the microwave
- 2 large or extra-large eggs, room temperature if I remember to take them out in time, but it’s fine if you don’t
- 1 teaspoon real vanilla extract
- 1 teaspoon water
Mix all of that together very well, about 5 minutes or so, then add:
- 3 cups oatmeal (I use old fashioned for a chewier cookie, but you can use quick oats too)
- 1 1/2 cups all purpose flour
- 1 teaspoon baking powder
- Between 1/2 or 3/4 teaspoon of salt
