Oatmeal Chocolate Chip Cookies

This recipe is from my neighbor Mary. She’s very kind and she’s a great baker. She gave us some of these cookies last week and I loved them. She gave me this recipe and also included tips and tricks.

Ingredients

  • 1 cup lightly packed brown sugar (light or dark doesn’t really matter, but I use light)
  • 1/2 cup sugar
  • 1 stick butter flavored Crisco shortening
  • 1/4 stick of unsalted butter, room temperature or lightly softened in the microwave
  • 2 large or extra-large eggs, room temperature if I remember to take them out in time, but it’s fine if you don’t
  • 1 teaspoon real vanilla extract
  • 1 teaspoon water
Mix all of that together very well, about 5 minutes or so, then add:
  • 3 cups oatmeal (I use old fashioned for a chewier cookie, but you can use quick oats too)
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • Between 1/2 or 3/4 teaspoon of salt
Just mix until it all starts to stick together. Then, stir in two cups of chocolate chips. Use your spoon to finish up the mixing if you see any loose flour stuck at the bottom of the bowl.
Bake at a 350F degree oven for about 10-15 minutes depending on your oven. Use an ice cream scoop to bake them on parchment paper.
